We at Law Ranch Cattle Company strive to have the best beef at reasonable prices for average families. The first step in the process is to raise healthy cows that are only fed grass, and are allowed to roam and act like cows. They are never ever given antibiotics or added hormones. When they are the right size, we have the animal humanely processed. At that time we leave the side of beef to hang, just like the photo to the right, so that it will "dry age" in a cooler at about about 34 degrees Fahrenheit We do this so that all the excess liquids will drain and evaporate, which condenses the meat, all the while an enzyme action takes place to tenderize the meat and add flavor. Depending on the size of the side, it typically hangs for at least 14 days.
The dry aging process is one thing that makes the Law Ranch beef better. Most do not take the dry aging as seriously as we do. We feel that this process really adds to our beef. Most meat in the store is "wet aged" which means that it is immediately cut and packaged, then "aged" while in transit to the store. While this may "age" the meat, it surely doesn't allow the meat to dry or benefit from maximum enzyme action.
The biggest difference you will notice is that because of this dry aging, the meat does not shrink up as much, so in the end you get more for your money. Oh, and it takes more like beef.
After the dry aging, we have the meat cut up and vacuum packed. It is then flash frozen to assure freshness for at least one year, if it stays frozen.

We pick it up and bring it to the farmer's market for you to purchase smaller quantities. If you need large quantities, please contact us, and we will arrange a special order to be delivered at the market, so that we will have plenty for our other farmer's market customers.
We have limits to what we can bring in our coolers every week, so if there is a special item you know you would want, please contact us, and we will hold it in our special orders coolers for you. An example would be organ meats, special cuts of steaks, more than 10 pounds of hamburger, or a roast cut very large, and we try to bring one brisket to every market. If you know you want one and know you will come late, let us know, we will hold it for you.
